Maceración Carbónica: In the carbonic acid maceration, the undamaged grapes - no de-skinning, no crushing - are stored in the fermentation container as a whole grape. This requires manual picking and careful transport, as well as careful relocation. The process has already been described by Louis Pasteur as intracellular fermentation.
